This is a type of Mexican bruschetta, also locally known as Molletes (pronounced moh-yeh-tehs). It is very tasty, very quick and easy to make. You can make it in under 10 minutes, including the baking time.
Start with a bun. This is bolillo bread, most popular bread in Mexico. Remove as much dough as you can from the middle without breaking the outside. So you end up with a valley inside.
Put mayonnaise inside. You can add some spicy salsa like chile de arbol, which is what we have added here. You can also replace mayonnaise with butter.
Fill the valley of the bread with refried beans. Don’t overdo it. Make sure the valley is not topped so there is still slight indentation. You can skip the beans if you like.
Next put some cheese over the beans. You can use your favorite shredded cheese. Here we use Oaxaca cheese which is very popular in Mexico.
Top it off with some meat. You can replace the meat with veggies like red pepper and tomato. But to keep with the real Mexican flavor we use chorizo.
Next, put some more cheese on top to melt everything together.
You can of course use alternatives to the ingredients we used. But the ingredients pictured here will give an authentic Mexican flavor. Next put the bread with the fillings in an oven. You can use a conventional oven, or an electric oven, or an air fryer. We prefer air fryer. Heat it up to 170 degrees and cook for 3 to 5 minutes, depending on how fast the cheese melts.
The bread should become brown and crunchy, the cheese nicely melted and the chorizo cooked.
You can add another one of your favorite salsas on top.
This quick and tasty Mexican crunchy bread recipe will be a favorite at home get-togethers. You can multiply the amounts by as many people as you are hosting and then some. Each slice can be quite filling, so if you are using this as an appetizer you might want to cut it into smaller pieces.
